Inventor of the vacuum-cooked chestnut in its natural state and bolstered by 35 years of expertise, Ponthier is today recognised as market leader in quality by the most renowned chefs and the general public. Ponthier has chosen to work with the PDO (Protected Designation of Origin) chestnut from Ardèche to produce its purée, a symbol of the traditional expertise of French chestnut growers. A guarantee of a holistic quality approach (product, method, environment, sustainable development), this official French distinction protects products with a strong link to their terroir, from their geographical origin through to the expertise of the people involved in production. In the case of chestnuts, traditional varieties from the Ardèche are used for their recognised taste qualities. They are harvested and sorted with great care. Traceability is also faultless, with fruit sourced from identified chestnut groves and a ban on any fertilisation or chemical additives. With more than 40 years' experience in cooking chestnuts, Ponthier has a perfect command of flame shelling and vacuum cooking to give a soft and delicious flesh with slightly sweet and roasted notes. The Ponthier purée thus perfectly recreates the typical aromas of the PDO Ardèche Chestnut: discreet notes of brioche, milk bread, pumpkin, sweet potato and honey. This new Chestnut purée recipe can be used in many ways (desserts, creams, ice creams and icings) and will appeal to all nut amateurs thanks to its intense, sweet flavour and smooth texture.
