The quince tree of Provence is a wild species of fruit tree. A veritable treasure of the Baronnies Provençales Regional Park and the Mont Ventoux area, the Provence quince prepared by Ponthier is the most highly esteemed variety of this beautiful, plump fruit with its canary yellow skin and soft, downy appearance. Ponthier sources quince from the Guintrand family whose business, founded in 1898, is classified a "Living Heritage Company" and provides quince for four generations. Their craftsmanship has remained very much artisanal with peeling finalised by hand during the purée making process. In order to soften the fruit, it is immersed in water which transforms into a juice and captures all of the fruit's organoleptic qualities. This precious cooking juice is incorporated into the purée which exhales a delicious floral fragrance of remarkable intensity and complexity. The final purée has a soft, powdery colour, an unrivalled fruitiness and a generous grainy texture, true to the original fruit. This purée is labelled PURE TRACE, a label created by Ponthier to guarantee traceability to both the harvest location and producer-harvester as well as ensuring a product free of pesticide residues (quantification limit of 0.01mg/kg for over 610 molecules analysed).
