The ruby peaches used by Maison Ponthier come from the Rhone Valley in France. Ruby peaches produce fruit at the same time as grape vines. Susceptible to the mildew that also attacks grapes, some estates on the Lyonnais hillsides planted a few ruby peach amongst their grapes, to detect mildew and treat it at its earliest stages. The ruby peach only produce fruit for around a dozen days. The peaches are hand-picked when fully ripe, at the end of the season for this late-blooming variety. The fragile fruit is then carefully transported to the factory. The purée is produced from these pretty purplish-blue peaches and their soft, fragrant, sweet and creamy flesh.
