Put all the ingredients in a mixer and blend well.

Mix the sugar and the pectin. Heat the PONTHIER strawberry purée and the inverted sugar. When boiling, add the sugar and pectin mix into the purée and boil again.

Boil the milk. Pour it on the white chocolate, the softened gelatin and the zests. Mix. Leave in the fridge and once the mix is cold, add the cream and mix.
Assembly
In a deep dessert dish, place a small disk of strawberry jelly. On the top of the jelly disk, make a rosette of the citrus panna cotta and add some fresh slices of strawberry, some small pieces of grapefruit and apple. Add some chilled tomato soup.
