For its papaya purée, Maison Ponthier has selected papayas from Madagascar, grown near the city of Toamasina on the banks of the Fanandrana river. Thanks to a light, airy and well-drained soil, the trees give firm, orange-coloured fruit that are very fragrant, juicy and quite sweet. Papaya is fragile and requires great care and attention when processing. Being a fragile fruit, papaya is still not consumed much in Europe.
